In this Bruneian adaptation of Chewi Kong, we replace the traditional ingredients used in Cameroonian cuisine with Bruneian flavors. Instead of using plantains, we use ripe bananas, which are more readily available in Brunei. Additionally, we incorporate spices commonly used in Bruneian cuisine, such as cinnamon, cardamom, and nutmeg, to enhance the flavor profile and create a unique twist on the original dish. Preparation

1.In a mixing bowl, mash the ripe bananas until smooth.

2.Add the all-purpose flour, rice flour, brown sugar, cinnamon, cardamom, nutmeg, and salt to the mashed bananas. Mix well until a thick batter is formed.

3.Heat vegetable oil in a deep pan or pot over medium heat.

4.Drop spoonfuls of the batter into the hot oil, frying a few fritters at a time.

5.Fry the fritters until golden brown on both sides, approximately 2-3 minutes per side.
