Preparation

1.In a large mixing bowl, combine the flour, instant yeast, sugar, and salt for the dough. Mix well.
-
2.Add the warm milk, melted butter, and eggs to the dry ingredients. Stir until a soft dough forms.
-
3.Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
-
4.Meanwhile, prepare the pineapple filling. In a saucepan, combine the diced pineapple, brown sugar, cinnamon, and cloves. Cook over medium heat for about 10 minutes, stirring occasionally, until the pineapple is tender and the mixture thickens. Remove from heat and let it cool.
-
5.Preheat the oven to 180°C (350°F). Grease a round baking dish.
-
6.Punch down the risen dough and divide it into two equal parts. Roll out one part into a circle that fits the bottom of the baking dish. Place it in the greased dish.
-
7.Spread the cooled pineapple filling evenly over the dough in the dish.
-
8.Roll out the remaining dough into a circle and place it on top of the pineapple filling, sealing the edges.
-
9.In a small bowl, combine the flour, cold butter, and sugar for the streusel topping. Use your fingers to rub the ingredients together until crumbly. Sprinkle the streusel over the top of the dough.
-
10.Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and cooked through.
-
11.Remove from the oven and let it cool slightly before serving.
