Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they turn golden brown.

2.Add the cubed beef to the pot and cook until browned on all sides.

3.Add the diced potatoes, sliced carrots, sliced parsnip, and diced turnip to the pot. Stir well to combine.

4.Pour in the beef broth and add the bay leaf and dried thyme. Season with salt and pepper to taste.

5.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beef is tender and the flavors have melded together.

6.Remove the bay leaf before serving.
