1.In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.

4.Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the bat meat is tender.

5.Add the taro roots, banana blossoms, and diced tomatoes to the pot. Stir in the fish sauce, soy sauce, and brown sugar. Season with salt and pepper to taste.

6.Continue simmering for another 30 minutes, or until the taro roots are cooked through and the flavors have melded together.
