1.In a large pot, add the beef shank, pork ribs, and chicken thighs. Cover with water and bring to a boil. Skim off any impurities that rise to the surface.

2.Add the chorizo sausages, potatoes, carrots, leek, onion, garlic, chickpeas, bay leaf, smoked paprika, cumin, salt, and pepper to the pot.

3.Reduce the heat to low and simmer for 2 hours, or until the meats are tender and the flavors have melded together.

4.Remove the meats from the pot and set aside. Discard the bay leaf.

5.Using a slotted spoon, transfer the vegetables and chickpeas to a serving dish.

6.Slice the meats and arrange them on top of the vegetables.
