Preparation

1.Preheat the oven to 180°C (350°F).

2.Lay the chicken breasts flat on a cutting board and make a horizontal slit in each breast to create a pocket for stuffing.

3.In a bowl, combine the chopped green chiles, Monterey Jack cheese, and Cheddar cheese. Mix well.

4.Stuff each chicken breast with the green chile and cheese mixture, then secure the opening with toothpicks.

5.In three separate bowls, place the flour, beaten eggs, and breadcrumbs mixed with chili powder, cumin, salt, and pepper.

6.Dip each stuffed chicken breast into the flour, then the beaten eggs, and finally coat it with the seasoned breadcrumbs.

7.Heat vegetable oil in a large skillet over medium heat. Fry the breaded chicken breasts until golden brown on both sides.

8.Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
