The use of these unique spices gives the dish a distinct Congolese flavor profile. Additionally, the original dish may use yogurt or coconut milk for creaminess, but in this Congolese version, we rely on the natural richness of tomatoes and spices to create a flavorful sauce. Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and sauté until they turn golden brown.

2.Add the chicken pieces to the pot and cook until they are browned on all sides.

3.Stir in the diced bell peppers and tomatoes, and cook for another 5 minutes.

4.In a small bowl, mix together the tomato paste, piri piri spice blend, mbala spice, selim pepper, paprika, ginger, coriander, cumin, and salt. Add this spice mixture to the pot and stir well to coat the chicken and vegetables.

5.Pour in the chicken broth and bring the mixture to a simmer. Reduce the heat to low, cover the pot, and let it cook for about 45 minutes to 1 hour, or until the chicken is tender and cooked through.

6.Serve the Spicy Chicken Stew hot, garnished with fresh cilantro. Enjoy with steamed rice or fufu.
