Preparation

1.Wash and soak the urad dal and moong dal in water for 4-5 hours. Drain the water.

2.In a blender, grind the soaked lentils to a smooth paste, adding a little water if needed.

3.Transfer the lentil paste to a mixing bowl and add grated ginger, chopped green chili, cumin seeds, black pepper, and salt. Mix well.

4.Heat oil in a deep pan for frying. Take small portions of the lentil mixture and drop them gently into the hot oil. Fry until golden brown and crispy. Remove from oil and drain on a paper towel.

5.In a separate bowl, whisk the plain yogurt until smooth. Add salt, chaat masala, and roasted cumin powder. Mix well.

6.Soak the fried lentil fritters in water for a few minutes, then gently squeeze out the excess water.

7.Arrange the soaked fritters on a serving plate and pour the prepared yogurt mixture over them.

8.Drizzle mint chutney and sweet tamarind chutney over the yogurt-covered fritters.

9.Garnish with fresh coriander leaves.
