Ingredients

While the original Chinese dim sum is typically steamed or fried, our New Nordic Dim Sum embraces the Nordic cooking techniques of poaching and roasting. We have also replaced some of the traditional Chinese ingredients with Nordic alternatives, such as using local seafood and foraged herbs in the fillings. Preparation

    In a food processor, combine the fish fillets, shrimp, leek, carrot, dill, chives, lingonberry jam, soy sauce, rice vinegar, ginger, honey, salt, and white pepper. Pulse until well combined but still slightly chunky.

    Place a dumpling wrapper on a clean surface. Spoon about 1 tablespoon of the filling onto the center of the wrapper. Brush the edges of the wrapper with water and fold it in half, pressing the edges together to seal. Repeat with the remaining wrappers and filling.

    Bring a large pot of water to a gentle simmer. Carefully add the dumplings to the pot and poach for 5-6 minutes, or until the filling is cooked through.

    Remove the dumplings from the pot using a slotted spoon and transfer them to a serving platter. Serve hot with lingonberry jam for dipping. Garnish with fresh dill sprigs.
