Treat your ingredients with care...

  • Sausages — Use high-quality pork sausages for the best flavor. You can also try using different flavored sausages like Cumberland or Irish-style sausages.
  • Guinness beer — If you prefer a non-alcoholic version, you can substitute the Guinness with beef or vegetable broth for a similar depth of flavor.

Tips & Tricks

  • For a richer flavor, you can brown the sausages and bacon before adding them to the layers.
  • Feel free to add other vegetables like carrots or leeks to the layers for added variety.
  • Serve the Dublin Coddle with crusty bread or Irish soda bread to soak up the delicious juices.
  • Leftovers can be refrigerated and reheated the next day for an equally tasty meal.
  • Customize the herbs to your preference by adding rosemary or sage for additional flavor.
