1.Heat the vegetable oil in a large pot over medium heat. Add the sliced onions and minced garlic, and sauté until they become fragrant and translucent.

2.Add the pork shoulder pieces to the pot and cook until they are browned on all sides.

3.Pour in the chicken broth, soy sauce, oyster sauce, and Shaoxing wine. Stir in the star anise, ginger slices, and sugar. Season with salt and pepper to taste.

4.Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 hour, or until the pork is tender.

5.Add the cubed potatoes to the pot and continue simmering for an additional 20 minutes, or until the potatoes are cooked through and tender.
