Preparation

1.Rinse the sushi rice under cold water until the water runs clear.

2.In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes or until the rice is tender.

3.In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved.

4.Transfer the cooked rice to a large bowl and pour the vinegar mixture over it. Gently fold the rice with a wooden spatula to evenly distribute the vinegar mixture. Let the rice cool to room temperature.

5.Meanwhile, bring a pot of water to a boil and add the shrimp. Cook for 2-3 minutes until the shrimp turn pink and opaque. Drain and rinse under cold water.

6.Slice each shrimp in half lengthwise, leaving the tail intact.

7.Take a small portion of sushi rice and shape it into an oblong shape using wet hands.

8.Place a slice of shrimp on top of the rice, gently pressing it down to adhere.

9.Repeat the process with the remaining rice and shrimp.

10.Serve the Ebi Nigiri Sushi with wasabi and soy sauce on the side.
