Preparation

1.In a large mixing bowl, combine the flour and salt for the pasta. Make a well in the center and add the eggs and water. Mix until a dough forms, then knead on a floured surface until smooth. Cover and let rest for 30 minutes.

3.Roll out the pasta dough into a thin sheet. Cut into 2-inch squares.

5.In a large pot of salted boiling water, cook the pasta pockets for about 5-6 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
