Ingredients
While Penang laksa is a spicy and tangy noodle soup, Corsican Seafood Soup takes inspiration from the original dish but adapts it to the flavors and ingredients commonly found in Corsican cuisine. The original laksa paste is replaced with a blend of Corsican herbs and spices, giving the soup a distinct Mediterranean twist. Additionally, the traditional rice noodles are substituted with Corsican pasta, adding a unique texture to the dish. The soup is also garnished with Corsican vegetables, enhancing the flavors and reflecting the local produce of the island. We alse have the original recipe for Penang laksa, so you can check it out.

Treat your ingredients with care...
- Fish fillets — Choose firm white fish fillets such as sea bass or red snapper for the best results. Ensure the fillets are fresh and free from any unpleasant odor.
- Corsican pasta — Fregula or gnocchetti are traditional Corsican pasta varieties that work well in this soup. If unavailable, you can substitute with small-sized pasta like orzo or ditalini.
- Mussels — Before cooking, make sure to clean the mussels thoroughly by scrubbing and removing any beards or debris. Discard any mussels that do not close when tapped.
