1.Preheat the oven to 180°C (350°F).

2.Cut the tops off the bell peppers and remove the seeds and membranes. Slice the zucchini and eggplants in half lengthwise and scoop out the flesh, leaving a shell.

3.In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.
