Preparation

  1. 1.
    Cook the rice noodles according to package instructions. Drain and set aside.

    In a wok or large skillet, heat the vegetable oil over medium-high heat.

    Add the minced garlic and sliced onion, and stir-fry for 1-2 minutes until fragrant.

    Add the shrimp and cook until they turn pink and are cooked through. Remove the shrimp from the wok and set aside.

    In the same wok, add the julienned carrot, sliced bell pepper, and snow peas. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.

    Push the vegetables to one side of the wok and add the mashed fermented tofu and dried shrimp to the other side. Stir-fry for 1 minute to release their flavors.

    Return the cooked shrimp to the wok and add the cooked rice noodles.

    In a small bowl, mix together the soy sauce, oyster sauce, sugar, and white pepper. Pour the sauce over the noodles and toss everything together until well combined.

    Cook for an additional 2-3 minutes, stirring constantly, until the noodles are heated through.
