1.In a saucepan, bring the water to a boil. Gradually whisk in the cornmeal, chestnut flour, and salt. Reduce heat to low and cook, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.

2.Remove the pan from heat and let the mixture cool slightly. Stir in half of the grated cheese until well combined.

3.In a separate skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

4.Add the ground lamb and pork to the skillet, breaking it up with a spoon. Cook until browned and cooked through.

5.Stir in the dried thyme, dried rosemary, black pepper, paprika, and nutmeg. Cook for an additional 2 minutes to allow the flavors to meld.

6.Preheat the oven to 375°F (190°C). Grease individual ramekins with olive oil.

7.To assemble the Montasù, spoon a layer of the cornmeal mixture into each ramekin, followed by a layer of the meat filling. Repeat the layers until the ramekins are filled, finishing with a layer of the cornmeal mixture on top.

8.Sprinkle the remaining grated cheese over the top of each ramekin.

9.Place the ramekins on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden.

10.Remove from the oven and let the Montasù cool for a few minutes. Garnish with fresh parsley before serving.
