Preparation

  1. 1.
Preheat the oven to 180°C (350°F).
  2. 2.
Lay one sheet of filo pastry on a clean surface and brush it with melted butter. Repeat this process with the remaining sheets, stacking them on top of each other.
  3. 3.
Cut the stacked filo pastry into rectangular strips, approximately 3 inches wide.
  4. 4.
Roll each strip tightly into a spiral shape, starting from one end.
  5. 5.
Place the spirals on a baking sheet lined with parchment paper.
  6. 6.
In a small bowl, mix together half of the Libyan honey, ground cinnamon, ground cardamom, ground nutmeg, and ground cloves.
  7. 7.
Drizzle the honey mixture over the filo pastry spirals, ensuring they are well coated.
  8. 8.
Bake in the preheated oven for 15-20 minutes, or until the pastry turns golden brown and crispy.
  9. 9.
In a heatproof serving dish, warm the remaining Libyan honey.
  10. 10.
Once the pastry spirals are baked, carefully transfer them to the serving dish with the warm honey.
  11. 11.
Heat the brandy or rum in a small saucepan over low heat until warm.
  12. 12.
Carefully ignite the brandy or rum using a long match or lighter, and pour it over the pastry spirals in the serving dish. Allow the flames to extinguish naturally.
  13. 13.
Dust the Flaming Honey Delight with powdered sugar and garnish with fresh mint leaves.
  14. 14.
Serve immediately and enjoy the captivating flavors of this Libyan twist on a classic French dessert.

Treat your ingredients with care...

  • Filo pastry — Handle the filo pastry sheets gently to prevent tearing. Keep them covered with a damp cloth while working to prevent them from drying out.
  • Libyan honey — Use high-quality Libyan honey for the best flavor. If the honey is too thick, warm it slightly to make it easier to drizzle over the pastry spirals.

Tips & Tricks

  • For a non-alcoholic version, you can omit the brandy or rum and simply drizzle the warm honey over the pastry spirals.
  • Serve the Flaming Honey Delight with a scoop of vanilla ice cream for an extra indulgent treat.
  • If you prefer a stronger spice flavor, you can increase the amount of ground cinnamon, cardamom, nutmeg, and cloves according to your taste.
  • Make sure to have a fire extinguisher nearby when flambéing to ensure safety.
  • Experiment with different types of honey to discover unique flavor profiles.
