Preparation

    In a large pot, heat the vegetable oil over medium heat.

    Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.

    In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.

    Add the bell pepper, carrots, and tomatoes to the pot. Cook for 5 minutes, until the vegetables start to soften.

    Stir in the tomato paste and cook for an additional 2 minutes.

    Return the chicken to the pot and pour in the chicken broth.

    Add the thyme sprigs, Scotch bonnet pepper, and bay leaf. Season with salt and pepper to taste.

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 45 minutes to 1 hour, until the chicken is tender and cooked through.
