Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Add the fresh spinach leaves to the pan and cook until wilted. Remove from heat and let it cool.

4.In a mixing bowl, combine the crumbled feta cheese, shredded mozzarella cheese, dried oregano, dried thyme, salt, and pepper.

5.Squeeze out any excess liquid from the cooked spinach and add it to the cheese mixture. Mix well to combine.

6.Roll out one sheet of puff pastry and line a greased pie dish with it. Trim any excess pastry.

7.Spread the spinach and cheese filling evenly over the pastry.

8.Roll out the second sheet of puff pastry and place it over the filling. Seal the edges by pressing them together.
