In this adaptation, the original Vanuatuan Gufong dish is transformed into a Soul food-inspired stew. The traditional ingredients of Gufong are combined with the flavors and techniques of Soul food to create a unique fusion. The addition of Southern spices, root vegetables, and tropical fruits gives the stew a distinct Soul food twist while still maintaining the essence of Vanuatuan cuisine. Preparation

    Heat the vegetable oil in a large pot over medium heat.

    Add the diced onion and minced garlic to the pot and sauté until fragrant and translucent.

    Add the chicken or beef chunks to the pot and brown them on all sides.

    Sprinkle the paprika, cayenne pepper, thyme, and oregano over the meat and stir well to coat.

    Pour in the chicken or beef broth and coconut milk, and add the bay leaves.

    Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes.

    Add the sweet potatoes, plantains, and pineapple chunks to the pot.
