Preparation

1.In a large pot, cook the Cornish bacon over medium heat until crispy. Remove the bacon from the pot and set aside.

2.In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

3.Add the diced carrots and potatoes to the pot and cook for a few minutes until slightly softened.

4.Return the cooked bacon to the pot and add the fresh or frozen peas, bay leaf, and thyme.

5.Pour in the vegetable or chicken stock and season with salt and pepper.

6.Bring the stew to a boil, then reduce the heat to low and simmer for about 30 minutes or until the vegetables are tender.
