Preparation

  1. 1.
In a large skillet, cook the bacon until crispy. Remove from the skillet and set aside.
  2. 2.
In the same skillet, add the sliced plantains and cook until golden brown on both sides. Remove from the skillet and set aside.
  3. 3.
In the same skillet, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and jalapeno pepper. Sauté until the onion becomes translucent.
  4. 4.
Add the diced tomatoes, tomato paste, smoked paprika, cumin powder, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  5. 5.
Pour in the chicken broth and simmer for another 5 minutes until the sauce thickens slightly. Adjust the seasoning if needed.
  6. 6.
In a separate non-stick pan, fry the eggs sunny-side-up or to your desired doneness.
  7. 7.
Warm the refried beans in a small saucepan over low heat.
  8. 8.
To assemble, spread a layer of refried beans on a plate. Place a fried egg on top of the beans. Add a spoonful of the tomato sauce over the egg. Crumble the crispy bacon on one side and arrange the caramelized plantains on the other side. Garnish with crumbled queso fresco or feta cheese and fresh cilantro leaves.
  9. 9.
Serve the Huevos Motuleños with warm tortillas on the side.

Treat your ingredients with care...

  • Plantains — Choose ripe plantains with yellow skin and some black spots. They should be firm but not overly ripe for caramelization.
  • Queso fresco or feta cheese — Crumble the cheese just before serving to maintain its freshness and texture.
  • Tortillas — Warm the tortillas on a dry skillet or in the oven before serving to make them soft and pliable.

Tips & Tricks

  • For a spicier version, leave the seeds in the jalapeno pepper or add a dash of hot sauce to the tomato sauce.
  • Customize the dish by adding sliced avocado, pickled onions, or a dollop of sour cream as additional toppings.
  • If you prefer a vegetarian version, omit the bacon and add sautéed mushrooms or grilled vegetables for extra flavor.
  • Make sure to cook the eggs to your desired doneness, whether it's runny yolks or fully cooked.
  • If you don't have refried beans, you can substitute them with black beans or pinto beans.

Serving advice

Serve the Huevos Motuleños hot, straight from the skillet, with warm tortillas on the side. The dish is best enjoyed by breaking the yolk and mixing it with the beans, sauce, and other toppings. The combination of flavors and textures creates a delightful breakfast experience.

Presentation advice

Arrange the dish by placing the fried egg in the center of the plate, surrounded by a bed of refried beans. Drizzle the tomato sauce over the egg, and then artfully arrange the crispy bacon and caramelized plantains on either side. Sprinkle crumbled queso fresco or feta cheese and fresh cilantro leaves on top for an added visual appeal.
