Preparation

1.In a mixing bowl, combine the crushed digestive biscuits and melted butter. Press the mixture into the base of a lined square baking dish. Refrigerate for 15 minutes to set.

2.In a separate bowl, dissolve the gelatin in boiling water. Stir until completely dissolved. Add the cold water, sugar, and fruit juice to the gelatin mixture. Stir until the sugar is dissolved.

3.Allow the gelatin mixture to cool to room temperature. Pour half of the mixture over the biscuit base in the baking dish. Refrigerate for 1 hour or until set.

4.In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the whipped cream and continue beating until well combined.

5.Spread the cream cheese mixture over the set jelly layer in the baking dish. Pour the remaining half of the gelatin mixture over the cream cheese layer. Refrigerate for 2-3 hours or until fully set.

6.Once set, remove the Jelly Slice from the baking dish and cut into squares or rectangles. Garnish with fresh fruits if desired. Serve chilled.
