Preparation

1.Rinse the rice under cold water until the water runs clear. Drain and set aside.

4.Stir in the diced tomatoes, tomato paste, paprika, curry powder, thyme, dried parsley, and chili powder (if using). Season with salt and pepper to taste.

5.Add the diced bell peppers and carrot to the pot, and cook for 5 minutes, allowing the flavors to meld together.

6.Pour in 4 cups (950ml) of water and bring to a boil.

7.Stir in the rinsed rice, reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and has absorbed all the liquid.

8.Remove from heat and let the rice sit, covered, for 5 minutes to steam.

9.Fluff the rice with a fork and garnish with fresh parsley or cilantro before serving.
