Ingredients

  • 2 large yams (about 800g), peeled and cut into chunks
  • 1 cup (240ml) vegetable oil, for frying
  • 1 cup (120g) roasted peanuts
  • 2 tomatoes, diced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • Salt, to taste
  • Fresh cilantro, for garnish

Preparation

    In a large pot, boil the yam chunks until tender. Drain and let them cool slightly.

    Mash the yam chunks until smooth and free of lumps. Shape the mashed yam into small balls.

    Heat the vegetable oil in a deep pan or skillet over medium heat. Fry the yam balls until golden brown and crispy. Remove from the oil and drain on a paper towel.

    In a blender or food processor, blend the roasted peanuts until finely ground.

    In a separate pan, heat a tablespoon of vegetable oil over medium heat. Add the onions and garlic, and sauté until translucent.
