Preparation

  1. 1.
Preheat the oven to 180°C (350°F). Grease and flour three 9-inch round cake pans.
  2. 2.
In a large mixing bowl, beat the eggs and sugar together until light and fluffy. Add the vanilla extract and mix well.
  3. 3.
In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the egg mixture, folding gently until just combined.
  4. 4.
Divide the batter equally among the prepared cake pans. Smooth the tops with a spatula.
  5. 5.
Bake for 20-25 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  6. 6.
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  7. 7.
In a mixing bowl, cream the softened butter until smooth. Gradually add the sweetened condensed milk and continue to beat until well combined.
  8. 8.
Fold in the crushed walnuts until evenly distributed throughout the filling.
  9. 9.
Place one cake layer on a serving plate and spread a generous amount of the filling on top. Repeat with the remaining layers, stacking them on top of each other.
  10. 10.
In a heatproof bowl, melt the dark chocolate, heavy cream, and butter together over a double boiler or in the microwave, stirring until smooth.
  11. 11.
Pour the chocolate glaze over the assembled cake, allowing it to drip down the sides.
  12. 12.
Refrigerate the cake for at least 2 hours to allow the flavors to meld and the glaze to set.
  13. 13.
    Serve chilled and enjoy!

Treat your ingredients with care...

  • Walnuts — Make sure to finely crush the walnuts for a smooth and consistent filling texture.
  • Dark chocolate — Use high-quality dark chocolate with at least 70% cocoa for the best flavor and texture.
  • Sweetened condensed milk — If desired, you can make your own sweetened condensed milk at home using milk and sugar.

Tips & Tricks

  • To achieve a perfectly moist sponge cake, make sure not to overmix the batter once the dry ingredients are added.
  • For a more intense nutty flavor, lightly toast the walnuts before crushing them.
  • If you prefer a sweeter filling, you can add a tablespoon of powdered sugar to the butter and condensed milk mixture.
  • Decorate the top of the cake with additional crushed walnuts or chocolate shavings for an elegant touch.
  • Serve the cake chilled for the best taste and texture.
