Preparation

  1. 1.

Treat your ingredients with care...

  • Eggplants — Choose eggplants that are firm and glossy. Look for ones with smooth skin and no blemishes. If you prefer a milder flavor, you can soak the hollowed-out eggplants in salted water for 15 minutes before stuffing them.
  • Ground lamb or beef — Opt for lean ground meat to reduce the fat content of the dish. If you prefer a stronger flavor, you can use lamb instead of beef.
  • Rice — Rinse the rice thoroughly before using to remove any excess starch. This will help prevent the rice from becoming sticky when cooked.

Tips & Tricks

  • For a vegetarian version, you can substitute the ground meat with cooked lentils or mushrooms.
  • If you prefer a spicier kick, add a pinch of chili flakes or a dash of hot sauce to the stuffing mixture.
  • Serve the Aromatic Stuffed Eggplant with a dollop of yogurt on top for a creamy and cooling contrast.
  • Leftovers can be refrigerated and enjoyed the next day. The flavors tend to meld together even more, making it even more delicious.
  • Experiment with different herbs and spices to customize the flavors to your liking.
