Preparation

  1. 1.
In a large mixing bowl, combine the flour, sour cream, and eggs. Mix until a dough forms.
  2. 2.
Knead the dough on a lightly floured surface until smooth and elastic. Cover with a clean kitchen towel and let it rest for 30 minutes.
  3. 3.
In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.
  4. 4.
In a separate bowl, mix the mashed potatoes with the sautéed onions, garlic, salt, and pepper.
  5. 5.
Roll out the dough on a floured surface to a thickness of about 1/4 inch. Cut out circles using a round cookie cutter or a glass.
  6. 6.
Place a spoonful of the potato filling in the center of each dough circle. Fold the dough over the filling and press the edges to seal.
  7. 7.
Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook until they float to the surface, about 3-4 minutes.
  8. 8.
Remove the dumplings from the water using a slotted spoon and transfer them to a serving dish.
  9. 9.
Drizzle the melted butter over the dumplings and sprinkle with fried onions.
  10. 10.
Serve the lazy pierogi hot and enjoy!

Treat your ingredients with care...

  • Potatoes — Make sure to use starchy potatoes like Russet or Yukon Gold for the best texture in the filling.
  • Sour cream — Opt for full-fat sour cream to achieve a rich and creamy dough.

Tips & Tricks

  • To add a twist to the filling, you can mix in some grated cheese or cooked bacon.
  • If you prefer a crispier texture, you can pan-fry the boiled dumplings in butter until golden brown before serving.
