Preparation
-
1.In a large mixing bowl, combine the flour, sour cream, and eggs. Mix until a dough forms.
-
2.Knead the dough on a lightly floured surface until smooth and elastic. Cover with a clean kitchen towel and let it rest for 30 minutes.
-
3.In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.
-
4.In a separate bowl, mix the mashed potatoes with the sautéed onions, garlic, salt, and pepper.
-
5.Roll out the dough on a floured surface to a thickness of about 1/4 inch. Cut out circles using a round cookie cutter or a glass.
-
6.Place a spoonful of the potato filling in the center of each dough circle. Fold the dough over the filling and press the edges to seal.
-
7.Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook until they float to the surface, about 3-4 minutes.
-
8.Remove the dumplings from the water using a slotted spoon and transfer them to a serving dish.
-
9.Drizzle the melted butter over the dumplings and sprinkle with fried onions.
-
10.Serve the lazy pierogi hot and enjoy!
