Preparation

1.Preheat the oven to 180°C (350°F).

2.Cut off the tops of the bell peppers and remove the seeds and membranes. Cut the zucchinis and eggplants in half lengthwise and scoop out the flesh, leaving a hollow shell.

3.In a large bowl, combine the rice, chopped onion, minced garlic, olive oil, ground cumin, ground coriander, ground cinnamon, cayenne pepper (if using), chopped parsley, chopped mint, salt, and pepper. Mix well to combine.

4.Stuff the hollowed-out vegetables with the rice mixture, pressing it down gently.

5.Place the stuffed vegetables in a baking dish and pour the vegetable broth into the dish.

6.Cover the dish with aluminum foil and bake for 45-50 minutes, or until the vegetables are tender and the rice is cooked.

7.Remove the foil and bake for an additional 10 minutes to lightly brown the tops of the vegetables.
