Treat your ingredients with care...

  • Pork bones or beef — For a richer flavor, you can roast the bones or beef before adding them to the pot.
  • Kumara (sweet potatoes) — Choose kumara with a firm texture and vibrant color for the best results.
  • Cabbage — To add a touch of sweetness, you can briefly sauté the shredded cabbage in a little oil before adding it to the pot.

Tips & Tricks

  • To make the broth even more flavorful, you can add a bay leaf and a few cloves of garlic.
  • If you prefer a thicker broth, you can mix a tablespoon of cornstarch with a little water and add it to the pot during the last few minutes of cooking.
  • Feel free to customize the vegetables according to your preference. You can add carrots, green beans, or any other vegetables you enjoy.
  • Leftovers can be stored in the refrigerator for up to 3 days. The flavors tend to develop further, making it even more delicious the next day.
  • Serve the Māori Boil-Up with a side of fresh bread or buttered rolls to soak up the flavorful broth.
