Ingredients
In this New Zealand adaptation of Tomates Rellenos, we incorporate Kiwi flavors by adding tangy kiwifruit to the filling mixture. The traditional Mexican spices are still used, but we also introduce some herbs commonly found in New Zealand cuisine to enhance the overall flavor profile. Preparation

1.Preheat the oven to 180°C (350°F).

2.Cut off the tops of the tomatoes and carefully scoop out the pulp and seeds. Set aside.

3.In a large skillet, cook the ground lamb over medium heat until browned. Drain any excess fat.

4.Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.

5.Stir in the diced kiwifruit, cumin, paprika, dried oregano, salt, and pepper. Cook for an additional 2 minutes.

6.Fill each hollowed-out tomato with the lamb and kiwifruit mixture.

7.Place the stuffed tomatoes in a baking dish and sprinkle the grated cheddar cheese on top.

8.Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden.

9.Garnish with fresh parsley before serving.
