Preparation

  1. 1.
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. 2.
In a mixing bowl, combine the ground almonds, flour, granulated sugar, melted butter, vanilla extract, salt, and lemon zest. Mix well until a smooth dough forms.
  3. 3.
Divide the dough into small portions and roll each portion into a ball.
  4. 4.
Place a dough ball onto the center of the preheated oplatky iron or a wafer press. Close the iron and press firmly to flatten the dough into a thin wafer.
  5. 5.
Carefully remove the wafer from the iron and transfer it to the prepared baking sheet. Repeat the process with the remaining dough.
  6. 6.
Bake the wafers in the preheated oven for 6-8 minutes, or until golden brown around the edges.
  7. 7.
Remove the wafers from the oven and let them cool completely on a wire rack.
  8. 8.
Once cooled, dust the wafers with powdered sugar and serve.

Treat your ingredients with care...

  • Almonds — Make sure to use ground almonds for a smooth texture in the wafer dough.
  • Lemon zest — Use a fine grater to zest the lemon, avoiding the bitter white pith.

Tips & Tricks

  • To achieve a thin and crispy texture, roll the dough balls as thinly as possible before pressing them in the wafer iron.
  • If you don't have an oplatky iron, you can use a wafer press or even a flat-bottomed pan to press the dough into thin wafers.
  • Store the cooled wafers in an airtight container to maintain their crispness.
