Preparation

1.In a large pot, bring water to a boil and add the mussels. Cook for 2-3 minutes until the shells open. Remove from heat and let them cool slightly.

2.Carefully remove the mussels from their shells, keeping the shells intact. Set aside.

3.In a separate pot, cook the rice according to package instructions. Once cooked, set aside.

4.In a pan, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

5.Add the cumin, paprika, red pepper flakes, lemon zest, and chopped mint leaves to the pan. Stir well to combine.

6.Add the cooked rice to the pan and mix until all the ingredients are well incorporated. Season with salt and pepper to taste.

7.Take a mussel shell and fill it with a spoonful of the rice mixture. Place a mussel on top of the rice and press gently to secure it.

8.Repeat the process with the remaining mussels and rice mixture.

9.Steam the stuffed mussels for 10-15 minutes until the flavors meld together and the mussels are tender.

10.Serve the Stuffed Mussels hot with lemon wedges on the side.
