Preparation

    Peel the plantains and cut them into chunks.

    In a large pot, bring the vegetable broth to a boil. Add the plantain chunks and cook until tender, about 15-20 minutes.

    In a separate saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

    Add the ground cumin to the onion and garlic mixture, and cook for an additional minute.
