1.In a large bowl, combine the lamb, chopped onions, minced garlic, ground cumin, ground coriander, ground cinnamon, ground ginger, paprika, turmeric, black pepper, and cayenne pepper (if using). Mix well to ensure the lamb is coated with the spices. Let it marinate for at least 1 hour, or overnight in the refrigerator for enhanced flavor.

2.Heat the vegetable oil in a large pot over medium heat. Add the marinated lamb and cook until browned on all sides.

3.Add enough water to cover the lamb, reduce the heat to low, cover the pot, and simmer for 2-3 hours or until the lamb is tender.

4.Once the lamb is tender, add the Bihari honey and blanched almonds to the pot. Stir well to combine.

5.Continue to simmer uncovered for another 30 minutes, allowing the flavors to meld together and the sauce to thicken slightly. Adjust the seasoning with salt, if needed.

6.Serve the Bihari Mrouzia hot, garnished with fresh cilantro. It pairs perfectly with steamed rice or naan bread.
