Preparation

    In a large bowl, combine the lamb, chopped onions, minced garlic, ground cumin, ground coriander, ground cinnamon, ground ginger, paprika, turmeric, black pepper, and cayenne pepper (if using). Mix well to ensure the lamb is coated with the spices. Let it marinate for at least 1 hour, or overnight in the refrigerator for enhanced flavor.

    Heat the vegetable oil in a large pot over medium heat. Add the marinated lamb and cook until browned on all sides.
