Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.

2.In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

4.Return the chicken to the pot and add the sweet potatoes, peanut butter, coconut milk, chicken broth, bay leaves, paprika, ground coriander, ground cumin, salt, and black pepper. Stir well to combine.
