Preparation

  1. 1.
In a large mixing bowl, combine the flour and salt. Gradually add the warm water while stirring until a dough forms.
  2. 2.
Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
  3. 3.
Divide the dough into 4 equal portions. Take one portion and roll it out into a thin circle.
  4. 4.
Brush the surface of the rolled-out dough with vegetable oil and sprinkle a quarter of the chopped scallions evenly over it.
  5. 5.
Roll the dough tightly into a cylinder shape, then coil it into a spiral shape. Flatten the spiral with your hand and roll it out again into a thin circle.
  6. 6.
Heat a non-stick pan over medium heat and add a small amount of vegetable oil. Cook the pancake for about 2-3 minutes on each side until golden brown and crispy.
  7. 7.
Repeat the process with the remaining dough portions and scallions.
  8. 8.
Cut the pancakes into wedges and serve hot.
