Ingredients
In this Assyrian adaptation, we incorporate saffron-infused rice instead of plain rice to add a touch of luxury and elevate the flavors. Additionally, we use Assyrian spices such as cumin, coriander, and cardamom to infuse the dish with the unique flavors of Assyrian cuisine. Preparation

1.Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

2.In a small bowl, soak the saffron threads in 2 tablespoons of warm water for 10 minutes.

3.In a large pot, combine the drained rice, lentils, water, cumin, coriander, cardamom, salt, and black pepper. Stir well to combine.

4.Place the pot over medium heat and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice and lentils are cooked and tender.

5.While the rice is cooking, heat vegetable oil in a separate pan over medium heat. Add the thinly sliced onions and fry until golden brown and crispy. Remove the onions from the pan and place them on a paper towel to drain excess oil.

6.Once the rice and lentils are cooked, remove the pot from the heat and let it sit, covered, for 5 minutes.

7.Fluff the rice with a fork and transfer it to a serving dish. Top the rice with the crispy fried onions.

8.Drizzle the saffron water over the rice for a vibrant yellow color and added aroma.
