1.Place the ox trotters in a large pot and cover them with water. Bring to a boil and let it simmer for 10 minutes. Drain and rinse the trotters.

2.In the same pot, add the trotters, onions, carrots, celery, garlic, bay leaves, peppercorns, thyme, apple cider vinegar, and water.

3.Bring the mixture to a boil, then reduce the heat to low and let it simmer for 4-5 hours, or until the trotters are tender and the liquid has reduced by half.
