Preparation

1.Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

2.In a large bowl, combine the sausage meat, chopped onion, minced garlic, dried thyme, dried sage, paprika, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

3.Roll out the puff pastry on a lightly floured surface into a rectangle of about 30x40cm (12x16 inches).

4.Cut the pastry into smaller rectangles, approximately 10x15cm (4x6 inches) each.

5.Place a portion of the sausage mixture along the center of each pastry rectangle.

6.Brush one edge of the pastry with the beaten egg and fold it over the sausage mixture, pressing the edges together to seal.

7.Place the sausage rolls on the prepared baking sheet, seam side down.

8.Brush the tops of the sausage rolls with the remaining beaten egg.

9.Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the sausage is cooked through.
