Ingredients
In this Ugandan adaptation of the Colombian dish "Papas chorreadas," we substitute some of the original ingredients to create a unique flavor profile. Instead of using traditional Colombian spices like ajiaco and cilantro, we incorporate Ugandan spices such as coriander, cumin, and turmeric to infuse the dish with a distinct flavor. Additionally, we replace the traditional Colombian cheese with creamy coconut milk to add richness and depth to the stew. Preparation

1.Heat the vegetable oil in a large pot over medium heat.

2.Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent.

3.Stir in the diced tomatoes, ground coriander, ground cumin, and ground turmeric. Cook for 2-3 minutes until the tomatoes soften.

4.Add the diced potatoes to the pot and stir well to coat them with the tomato mixture.

5.Pour in the coconut milk and season with salt to taste. Stir everything together.

6.Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes, or until the potatoes are tender and cooked through.

7.Once the potatoes are cooked, remove the pot from the heat and let it sit for a few minutes to allow the flavors to meld together.
