Preparation

1.Preheat the oven to 180°C (350°F).

2.Cut off the tops of the eggplants and carefully hollow them out, leaving a 1/2-inch thick shell. Chop the removed eggplant flesh and set aside.

3.In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

4.Add the ground meat (or vegetarian alternative) to the pan and cook until browned.

5.Stir in the chopped eggplant flesh, diced tomatoes, ground cumin, paprika, cinnamon, salt, and pepper. Cook for an additional 5 minutes.

6.Rinse the rice under cold water and drain. Add the rice to the pan and cook for 2 minutes, stirring constantly.

7.Remove the pan from heat and stir in the chopped parsley and mint.

8.Stuff the hollowed eggplants with the rice and meat mixture, pressing it firmly.

9.Place the stuffed eggplants in a baking dish and pour 1 cup (240ml) of water into the dish.

10.Cover the dish with aluminum foil and bake for 45 minutes.

11.Remove the foil and bake for an additional 15 minutes, or until the eggplants are tender and the rice is cooked.
