1.In a large pot, add the beef bones and cover with water. Bring to a boil and let it cook for 5 minutes. Drain and rinse the bones to remove any impurities.

3.Pour in 8 cups of water and bring to a boil. Reduce the heat to low and let it simmer for at least 1 hour, skimming off any impurities that rise to the surface.

4.While the broth simmers, soak the rice noodles in hot water according to the package instructions. Drain and set aside.

5.Once the broth is ready, strain it through a fine-mesh sieve, discarding the solids. Return the broth to the pot and keep it warm.

6.Prepare the garnishes by washing and chopping the fresh herbs. Slice the lime into wedges and set aside.

7.To serve, divide the cooked rice noodles among bowls. Top with the thinly sliced beef. Ladle the hot broth over the beef and noodles.
