Preparation

1.In a large mixing bowl, combine the Rwandan flour and cold, cubed Rwandan butter. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs.

2.Gradually add the cold water to the flour mixture, mixing until the dough comes together. Shape the dough into a ball, cover with plastic wrap, and refrigerate for 30 minutes.

3.Preheat the oven to 180°C (350°F).

4.In a separate bowl, mix the cottage cheese, sugar, Rwandan honey, and ground cardamom until well combined.

5.On a lightly floured surface, roll out the chilled dough into a large circle, about 1/4 inch thick.

6.Transfer the rolled-out dough to a greased baking dish, pressing it gently into the bottom and sides.

7.Spread the cottage cheese filling evenly over the dough.

8.Fold the edges of the dough over the filling, leaving the center exposed.

9.Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown.
