Preparation

1.In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until golden brown.

2.Add the minced garlic, grated ginger, turmeric, cinnamon, cumin, paprika, salt, and black pepper to the pot. Stir well to combine and cook for another minute.

3.Add the chicken pieces to the pot and brown them on all sides.

4.Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the chicken is tender.

5.While the chicken is cooking, rinse the lentils under cold water and drain.

6.In a separate pot, bring 4 cups of water to a boil. Add the lentils and cook for about 20-25 minutes or until tender. Drain and set aside.

7.Once the chicken is cooked, remove it from the pot and shred the meat using two forks. Discard the bones and return the shredded chicken to the pot.

8.In a frying pan, melt the butter over medium heat. Add the thinly sliced onions and cook until golden brown and crispy. Remove from the pan and set aside.

9.In the same frying pan, add enough vegetable oil to deep fry the onions. Heat the oil over medium-high heat and fry the onions until golden and crispy. Remove from the oil and drain on a paper towel.

10.To serve, place a generous portion of spiced lentils on a plate. Top with shredded chicken and garnish with crispy fried onions. Serve hot and enjoy!
