Preparation

1.In a saucepan, heat the vegetable or chicken broth over medium heat until hot but not boiling. Keep it warm on low heat.

2.In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent and fragrant.

3.Add the Arborio rice to the pot and stir well to coat each grain with the oil. Cook for a minute or two until the rice becomes slightly translucent.

4.Pour in the white wine and stir until it is absorbed by the rice.

5.Dissolve the saffron threads in a small amount of warm broth and add it to the pot. Stir well.

6.Begin adding the warm broth to the pot, one ladleful at a time, stirring constantly until each ladleful is absorbed before adding the next. Continue this process for about 20 minutes or until the rice is al dente.

7.Stir in the grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.

8.Remove the pot from heat and let the risotto rest for a few minutes before serving.

9.Garnish with fresh parsley and serve hot.
