Preparation

    In a saucepan, heat the vegetable or chicken broth over medium heat until hot but not boiling. Keep it warm on low heat.

    In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent and fragrant.
