1.In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden and fragrant.

3.Stir in the ground cumin, ground coriander, ground turmeric, paprika, cayenne pepper (if using), salt, and pepper. Cook for an additional 2-3 minutes to allow the spices to release their flavors.

4.Remove the skillet from heat and let the filling cool slightly.

5.Preheat the oven to 180°C (350°F).

6.Lay out one sheet of phyllo pastry and brush it lightly with melted butter. Place another sheet on top and repeat the process until you have 5 layers.

7.Cut the layered phyllo pastry into 3 equal strips.

8.Place a spoonful of the lamb filling at the bottom of each strip. Fold the pastry diagonally to form a triangle, enclosing the filling. Continue folding until you reach the end of the strip.

9.Repeat steps 6-8 with the remaining phyllo pastry and filling.

10.Place the prepared pastries on a baking sheet lined with parchment paper.
