1.Wash the figs thoroughly and remove the stems. Cut them into quarters.

2.In a large pot, combine the figs, sugar, lemon juice, orange zest, cinnamon stick, and water.

3.Place the pot over medium heat and bring the mixture to a boil, stirring occasionally.

4.Reduce the heat to low and let the jam simmer for about 1 hour, or until it thickens to a desired consistency. Stir occasionally to prevent sticking.

5.Remove the cinnamon stick and discard.

6.Pour the hot jam into sterilized jars and seal tightly.
