Preparation

  1. 1.
Preheat the oven to 450°F (230°C). Place a 10-inch (25cm) cast-iron skillet or oven-safe pan in the oven to heat.
  2. 2.
In a mixing bowl, whisk together the chickpea flour, water, 1 tablespoon of olive oil, rosemary, thyme, and salt until smooth. Let the batter rest for 15 minutes.
  3. 3.
In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced onion and cook until caramelized, stirring occasionally, for about 10-15 minutes. Set aside.
  4. 4.
Carefully remove the hot skillet from the oven and pour the batter into it. Spread the caramelized onions evenly over the top of the batter.
  5. 5.
Place the skillet back in the oven and bake for 15-20 minutes, or until the socca is golden brown and crispy around the edges.
  6. 6.
Remove from the oven and let it cool for a few minutes. Season with freshly ground black pepper and cut into wedges. Serve warm.

Treat your ingredients with care...

  • Chickpea flour — Ensure that the chickpea flour is fresh and free from lumps for a smooth batter.
  • Fresh herbs — Use fresh rosemary and thyme for the best flavor. If unavailable, you can substitute with dried herbs, but reduce the quantity by half.
  • Caramelized onions — Slowly cook the onions over medium heat to achieve a rich caramelized flavor. Stir occasionally to prevent burning.

Tips & Tricks

  • For a crispier socca, preheat the skillet in the oven for a longer time before pouring the batter.
  • Experiment with different herbs like thyme, oregano, or basil to customize the flavor.
  • Serve the socca with a dollop of vegan yogurt or a drizzle of tahini for added creaminess.
  • Socca is best enjoyed fresh and warm, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
  • To reheat socca, place it in a hot skillet for a few minutes until warmed through.

Serving advice

Serve the Socca as an appetizer or a light main course. Cut it into wedges and garnish with fresh herbs for an attractive presentation. Pair it with a side salad or roasted vegetables to create a complete meal.
